What is a lacto-fermented hot sauce?
Our hot sauces are all made from fermented peppers for flavor. Lacto-fermentation is a centuries-old, natural process. It enables us to skip the vinegar in most of our sauces, resulting in a bolder, more pepper-forward sauce. The sauces are not live, as we pasteurize before packaging. Therefore, please refrigerate your hot sauce after opening.
How can you make cheese without dairy?
Turns out, the process isn’t all that different without the dairy. We start with a base of cashews, cannellini beans, and coconut and culture it - just like you would with a dairy cheese. Finally, we add different natural flavors, package it, and bring it to the markets. That’s it.
Are your products vegan?
Yes! All our products are vegan.
Are your products allergen-friendly?
Our cheeses contain cashew and coconut. They are free from dairy, eggs, gluten, and soy. Our sauces are free from nuts and animal products, but occasionally contain trace amounts of wheat when infused with beer (double check the ingredient lists.) All our products are made on equipment shared with other allergens, because we hand craft our sauces and cheeses in a shared commercial kitchen.
What is the nutritional value of your cheeses?
Our recommended serving size is 1 oz. (28g) of cheese, so there are four servings per jar. Each serving contains 80-90 calories depending on the flavor, 6g fat, 5g carbs, and 3g protein. For the exact nutritional values, head to the cheese product pages in our online store.
Where can we shop in person?
Our products are available in Houston, TX at weekly farmers markets (Urban Harvest, Heights Mercantile, and Rice Village). Head to our events page to see where we’ll be each week. How do you ship your products?
We ship the hot sauces economy for a rate based upon on the order weight, and we ship the cheeses (or any combined cheese and hot sauce orders) via UPS 2 day air for a flat rate of $20 per order. We’ll pack the cheeses in an insulated box with cold packs to keep them chilled. When you order cheeses, they will ship the following Monday or Tuesday, and we will provide tracking information upon sending.
